Now take a heavy bottom non-stick pan and add oil and heat it, once the oil is hot put the marinated fish and cook it. (cook for 70- 80 % only). Then remove the cooked fish with utmost care and keep aside. Better use a spatula/turner to remove fish.
Step 2:
Now take the same non-stick pan which is used for cooking fish. Add biryani masala, mint leaves, coriander leaves (cilantro), ginger garlic paste, slit green chilli, lemon juice, fried onion (Ingredients set 2) to the left over oil in the pan and cook it for 10 minutes occasionally mixing the ingredients. Now take half of this mixture and pour it into the top of cooked fish and keep it aside.
Step 3:
Now take a pot add water and boil it, then add oil, salt, shahi zeera, cloves, cinnamon stick and bay leaves (Ingredients set 3). Now add rice which is soaked for half an hour and cook till the rice is 80% done and drain the water.
Step 4:
Now add 1 tablespoon of water in which rice was cooked into masala/mixture (step 2) and bring it to a boil. Then add rice on top of this masala and spread it evenly and reduce the flame. Then add saffron colour, fried onions, oil in which masala was prepared, (Ingredients set 4) and spread the fish pieces on top of rice carefully and cover it with air tight lid and let it simmer (Dum) for 15 - 20 minutes on low flame. Now the delicious fish biryani is all done!
Step 5:
Transfer the fish pieces to a separate bowl. Transfer rice to serving plate, add fish pieces with its masala on top, garnish with mint leaves and cilantro and serve.
Important tips:
Use only fresh ingredients for alluring aroma and taste.
Use fresh king fish (anjal) for better results.
